Here's my first recipe for the year and of course it's something sweet! All my recipes I will be posting on here will either have been created or found on Pinterest (and is a review of what I thought and what i did differently) will all be paleo friendly.
I Found this recipe on Pinterest. I must say I have a love for that site. It's very addicting! This is such a quick and simple recipe for the days you are craving something sweet.
Paleo Chocolate Chip Cookies
- 1 & 1/4 cup almond flour ( I like using bob Mills almond meal/flour, I find that the cookie holds well together.)
- 1/4 tsp. Baking soda
- 1/8 tsp. salt
- 1/4 cup coconut oil melted
- 1/4 cup honey
- 1 tsp. vanilla extract
- and how many chocolate chips you want to add you can. I count macros so I added the suggested amount on the label which was 16 chips.
First your going to add all the dry ingredients to a mixing bowl.
Almond flour, salt and the baking soda
|Mix together the dry ingredients once there in the bowl.|
|Next your going to add the wet ingredients. Coconut oil which has been melted in the microwave and then the honey. Stir that together. The consistency should be gritty and the dough should be moist.|
|Add the chocolate chips in and you can make as many cookies as you want. I just ended up making 6 big ones since I will be the only one eating them. (Allergies in our household.)|
|Here they are all out on the cookie tray ready to be baked in the oven at 350 degrees and I found that if you bake them for 12-13 minutes the bottom of them crisp up and hold very well.|
|I had to take a sneak peak in the oven and smell the delicious treat!|
|Here they are pulled out of the oven. Let them cool for a good 5 minutes before moving them to a plate that way they don't crumble.|
